Cumin Coriander Crusted Salmon (serves 2)
1 tablespoons cilantro, finely chopped
2 teaspoons shallot, finely chopped
1 teaspoon olive oil
1/4 teaspoon cumin
1/8 teaspoon ground coriander
1/8 teaspoon kosher salt
1/8 teaspoon black pepper
(2) 5 to 6 ounce salmon fillets
Garnish: 4 lemon wedges
1. Combine cilantro shallots, oil, cumin, coriander, salt and pepper in a small bowl, stirring to form a paste. (can be made ahead of time).
2. Place fish skin side down in a shallow baking dish. Coat with cilantro mixture. Cover and refrigerate for 1 hour.
3. Preheat oven to 400.
4. Arrange fish on the rack of a roasting pan coated with cooking spray. Bake at 400 for 10 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges or fresh lemon juice.
